I always have a system for packing Willa’s lunch every day. I always include her main item (like a sandwich), something crunchy (like crackers or rice cakes), a dairy (like string cheese or yogurt), a fruit, a juice box, and a treat. I don’t get too much into making those themed lunches people do. They are absolutely adorable but I honestly don’t have the time for it. But I do love making fun lunchbox treats for Willa to correlate with the holidays.
This month we are making St. Patrick’s Day treats. They are made just like Rice Krispy treats, but with Lucky Charms instead. They are so cute and super easy to make. You will need 5 cups of Lucky Charms cereal, 2.5 cups of miniature marshmallows, and three tablespoons of butter.
Melt the butter in a large pan over medium heat. Add the marshmallows and continue stirring until melted and blended. Then, add the cereal and combine well. Pour it into a 9×9 pan. I lined mine with parchment paper. I also took out marshmallows left over in the cereal box and added them to the top of the krispy treats before it dried so you could easily see all the charms and they would look pretty.
After an hour, I cut mine into squares. I stuck them in my little dessert display (I found mine at Home Goods but this was a similar one) and they were ready for Willa’s lunches.
She loved helping me make these and she was excited to take them to school. I love that she enjoys cooking with me and I always feel like it’s a great learning opportunity for her each time she is in the kitchen with me.
